Dairy Free Beef Stroganoff [6-7m+] & Toddlers

We are a group of six dynamic mums from around the world: Germany, U.S., South Africa, Australia and U.K and our children range from ages 10 months to 3 years.
We love this emerging Instagram community of moms who despite their busy days and their picky little eaters are excited about cooking nutritious meals for their families… so we decided to team up to create this Healthy Kids Community to provide genuinely healthy, tasty and inspiring food ideas to help grow and nourish your little people. Each week will be focused around a particular theme that may present a healthy cooking challenge for mums.

A lot of mamas these days look for cow milk alternatives in some or all of their cooking. Be it for allergy reasons or as a lifestyle choice, we are going to support this challenge this week by offering some ideas of yummy dairy-free meals and treats.

Day two of our healthy cooking challenge. I have chosen to cook beef stroganoff, it is a classic recipe that is loved by every family. I have substitute sour cream with firm silken tofu. It has a wonderful sour cream consistency when blended. Also added apple to give it more flavour. Baby boy approved and finished his portion. 🙂

Ingredients

  • 100gr sirloin steak (cut into thin slices)
  • 3 large cantarelle mushroom (or other types of mushroom) (cleaned & sliced)
  • 1 small red onion (peeled & sliced)
  • 2 large sweet apples (peeled, cored & cut)
  • 1/4 pack firm silken tofu
  • 1 1/2 cups water
  • 1 tbps olive oil
  • 1/4 tsp cumin powder
  • 1/4 cup cooked brown rice

Method

  1. Use your best knife to cut the meat into millimetre thin slices.
  2. Add olive oil and fry the onion for about 1 minutes then add the meat and fry until the meat is done. Add mushroom and carry on frying until they have shrunk in size.
  3. Add cumin powder, 1 cup of water, cover with a lid and let it cook in low heat for 30 minutes.
  4. Steam apples for 10 minutes and puree.
  5. Blend tofu until you have reached a creamy consistency.
  6. When the meat is done, add 2 tbps of creamy tofu and 1 cup apple puree. Mix well.
  7. Remove half the portion and blend with 1/4 cup brown rice and 1/2 boiled water. I have left the other half for my toddler son. I added a pinch of salt and 1 tsp of light soya sauce for him.
