Roasted Pumpkin & Capsicum Curry Puree [7m+]

This is a wonderful autumn puree, the curry is not very strong but gives it a little extra kick to the taste! Yum! 😋 Tag mum!

Constantin loved it! Served in oogaababy bowl and froze in tutti bimbi silicon food tray.

Ingredients

  • half medium pumpkin (de-seeded, peeled & sliced)
  • 1 large capsicum / red bell pepper (cored and cut into quarters)
  • 1 large apple (peeled, cored & cut)
  • 1/4 tsp curry madras powder
  • 1/2 cup steam liquid from the apple.
  • 1 tsp coconut oil

 

Method

1. Preheat the oven to 190C. Put pumpkin and capsicum in a large baking tray. Add coconut oil and put it in the oven for 10 minutes.

2. Take out tray and give it a good mix to spread the oil all over. Put the tray back in the oven for 40 minutes.

3. Meanwhile steam the apple for 8 minutes.

4. Move everything to a smoothie jug or large deep bowl, add liquid, curry powder and blend until you have reached your desired consistency.

Nutritional Powerhouse Puree [8m+]

I call this a Nutritional Powerhouse Puree because this mixture is a bomb full of nutrients! This can be made into a power drink too for adults!

Constantin wasn’t sure about the taste at first but then accepted it and finished his portion with a smile. So don’t go overboard with brussels sprouts as it has a very strong taste and it’s not an easy vegetable nor likeable taste to give to babies on its own.

Some health facts:
Brussels sprouts and swiss chard are incredible powerhouses of nutrition! Both have an excellent source of vitamins K, and C. Swiss chards have good source of magnesium, potassium, iron, and dietary fiber.
Brussels sprouts deserve to be featured on dinner plates more often than they usually are. They are a very good source of numerous nutrients including folate, manganese, vitamin B6, dietary fiber, choline, copper, vitamin B1, potassium, phosphorus, and omega-3 fatty acids. 💪💪💪

As usual, I served the puree with his favourite numnum weaning spoon. 🙂

Ingredients

  • 1 large sweet potato (peeled & chopped)
  • 4 brussels sprouts (removed the dirty leafy part and cut into half)
  • 1 large stalk of swiss chard inc. the leafy part (cut into smaller size)
  • 2 red apples (peeled, cored & cut)
    Steamed liquid.

Method

  1. Steam everything together for 15 minutes and blend until you’ve reached your desired consistency. Add the steamed liquid to thin out the puree if required.
  2. Suitable for freezing.

Strawberry & Banana Smoothie / Puree with Rolled Oat Flakes [7m+] , Toddler & Family

I made this for Baby C for his afternoon snack today. He was dipping it with his #numnuminc spoon and as usual I helped him to aim for his mouth instead of me! 😂
Made one portion in a reusable pouch for toddler J as well.

Instant rolled oat flakes are the same as rolled oats just much thinner and dissolve within seconds! I add them to Constantin’s purees and our energy drinks / smoothies a lot. 

Ingredients

5 large frozen strawberries (slightly defrosted)
1 large very ripe banana
2 heaps of tbsp of instant rolled oat flakes.

Method

Blend everything together until you’ve reached your desired consistency and serve chilled. 😋

My entry dish for this week’s challenge is Pumpkin Corn Bread, served with 1 tbsp  natural Greek yogurt with pomegranates and some more on the side. I have made this the day before and just before serving I took a few pieces out from the fridge and heated them up in the oven for 5 minutes in oogaa divider plate before serving. This is great for BLW babies & toddlers to enjoy as breakfast or as snack time. Slice the rest in little portion slices and freeze!

This pumpkin corn bread has ZERO sugar and they taste so good! I have created this recipe specifically for BLW babies and toddlers but it’s just as yummy for adults to enjoy too (at least I do!)

Ingredients

  • 1/2 medium pumpkin (peeled, seeds removed & cut) or 1 1/2 cup mashed pumpkin
  • 1/2 cup spelt flour
  • 1/2 cup normal flour
  • 1/2 cup corn flour (polenta)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp natural Greek yogurt
  • 2 medium organic free range eggs
  • 1/4 cup flax seed oil
  • 1/2 cup of mature cheddar cheese or any cheese of your choice
  • Roasted flaxseeds as garnish (optional)
  • a knob of butter / oil for greasing the baking form

Method

  1. Steam the pumpkin for 15 mins and then mash not puree.
  2. Prehet the oven to 180 degrees C.
  3. In a large bowl, stir together the flour, yogurt, baking powder and baking soda. Make a well in the center.
  4. In a small bowl, beat the eggs, add the oil and stir in well. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork or spoon then add all the mashed pumpkin mix well and last add the cheese.
  5. Grease the baking form (ca. 28cm x 23cm) with butter or oil then pour the batter into form.
  6. Bake for 20-25 minus or until the top looks golden brown or poke a stick through, if it comes out non sticky then its done. Serve warm or cold.
  7. Suitable for freezing.

Aubergine Lasagne for BLW Baby [10m+], Toddler & Family

Vegetarian lasagne can taste just as good as meat lasagne. 😋  This is just one way of making it. You can use lasagne sheet as well.

Toddler J like it! 😄 Served with quinoa salad.

Ingredients

  • 2 small aubergines / eggplants or one large
  • 1 medium yellow onion
  • 1 clove of garlic
  • 1 1/2 cup chopped tomatoes (fresh / tin) – I used 3 large sun riped tomatoes (skinned & de-seeded)
  • 1 1/2 tbsp concentrated tomato paste
  • 1/2 tsp herbs de province
  • 1 large light mozzarella / 2 small
  • 1 tbsp olive oil
  • salt & pepper to taste
  • fresh basil leaves

Method

  1. Preheat oven at 200 degrees Celsius.
  2. Heat up a frying pan, add olive oil and sauté the onion and garlic together in medium heat until the onion turns golden brown. Add tomatoes and tomato paste and let it cook for 10 minutes. Add herbs and salt & pepper to taste. Set aside when it’s done.
  3. Cut the aubergine in 1 cm thick and fry in medium heat in without oil in a non stick frying pan for 1 minutes each side. They should be soft by now. Slice the mozzarella in thin slices. Just think how many you will need as they will go in between the aubergine slices.
  4. In a baking tray, cover the bottom with some tomato sauce. Lay one slice of aubergine add 1-2 tbsp of tomato sauce and then cover with mozzarella. Repeat this until you have mozzarella as the last layer.
  5. Bake for 20 minutes. Serve warm with fresh basil leaves.

Product Review of Nom-Nom Kids Reusable Food Pouches

Three years ago I was looking for reusable food pouches online but couldn’t find any so I opted for one time use food pouches instead. They were great as I could still make my own purees, but fairly costly in the longterm. However, I still preferred to make my own purees rather than buying ready made ones off the shelves. I used to call the shop bought food pouches my boy’s fast food on the go. lol 😄
